Whenever we use a high cocoa content in our creations, we reach for naturally mellow beans. These are our best Ghanaian cocoa beans, harvested and dried under the tropical sun by our farmers. Our Engaged Ethics programme extends to our cocoa farmers and we have already seen the lives of many in Ghana transformed. These surprisingly mellow beans give our dark chocolate a rounded-richness that offsets any bitter hues.

Our 85% cocoa dark chocolate has deep chocolatey notes and we knew these would shine through as a whipped cream ganache. Our 70% cocoa dark chocolate shell is deep and intense – and just perfect for those who prefer their chocolate on the less-sweet side. The shiny, spherical casing gives a satisfying crack to release the velvety ganache; the contrasting textures are a delight for the senses.
